Where can you host an ERP with AI so your data stays in the EU?
Your data ends up in three places: the ERP itself, the connection between the ERP and the AI, and the AI model that processes your questions. All three have to be right. An ERP in Frankfurt does not help much if the connection runs in Virginia.
Most EU hosting checklists only cover the ERP. With AI it goes wrong more often at the connection and the model, because that is where data leaves without anyone calling it an export.
Which ERP hosting keeps data in the EU?
Hosting where you choose an EU region yourself. For Odoo that means Odoo.sh, your own server at a European provider such as Hetzner or OVHcloud, or a partner that manages the hosting for you.
On Odoo.sh you pick the region when you create a project. On Odoo Online, check your contract or customer portal for where your database lives. Your own server gives you the most control, and all the updates.
Where does the connection between your ERP and your AI run?
Usually that is an MCP server, and it sees everything the AI asks for. Run it yourself in the EU, or pick a provider that hosts it in the EU and signs a data processing agreement.
An MCP server translates between an AI assistant such as Claude or ChatGPT and your ERP. Every invoice or customer the AI requests goes through it, which makes it exactly the place you want to know about. The four ways to run one are in where to host your Odoo MCP server.
Does the AI model process your data outside the EU?
That depends on your provider and your contract. Your question and the answer go to whoever runs the model, and their terms decide where that happens and how long it is kept.
Ask your provider which region processes prompts, and whether prompts are used to train models. If it is not in writing, do not assume it. If you want a European provider, Mistral (France) with Le Chat is an option, and it connects to Odoo too: connect Mistral Le Chat to Odoo.
Which combination should an SME choose?
ERP in an EU region, the connection in the EU under a data processing agreement, and an AI provider whose terms you have actually read. If you want stricter, move one column to the right per row.
| Place | Minimum | Stricter |
|---|---|---|
| ERP | Odoo.sh or managed hosting in an EU region | Your own server at a European provider |
| Connection (MCP) | Hosted MCP server in the EU with a data processing agreement | Self-hosted MCP server on your own server |
| AI model | Business plan where prompts are not used for training | European provider or a model you run yourself |
How does Pantalytics do this?
MCP Pro, our MCP server for Odoo, runs at Hetzner in the EU. We do not use customer data to train AI models. If you would rather run it yourself, the source is on GitHub.
Our data processing agreement is at pantalytics.com/dpa.
